Celery cooking in bacon grease.  So gross, SO GOOD!

Bacon drained out of its grease so the celery and onions can be alone with the grease. Special time.

Double checking Mom's recipe which has no measurements or cook times. Awesome.

Onions joining celery in vat of gross awesomeness.

After a bag of cubed potato bread, in go the 15 stale croissants.  Oh YEAH!

New England childhood Thanksgiving stuffing imperative -- Bell's seasoning with the awesome box. Same as was in 1867.

Bacon grease, onions, celery, bread, croissants, seasoning.  Tawk amongst yourselves. 

Bacon.  As fatty as I could find.  Grease for the dressing. Grease and bacon for the kraut. 

Hubby likes crispy bits, putting it in pans for additional baking.

Buttering up for the sauerkraut.

Mmmm. (I think, I don't eat it).  Hubby said it was best ever (hello? what isn't best ever when you add 1/2 lb bacon and bacon fat to it?)
